Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze's special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

Good entry level Gueuze Lambic
A good place to start for those wanting to embark on the "sour beer" journey, and still a very complex beer. The lively palate delivers notes of pineapple, unripe tropical fruits, hard cheese, grapefruit rind & subtle oak character, topped off with a good measure of citric & acetic acid bite.
A brewer with a difficult past, now owned by a large beverages company and capable of some very ordinary alcopop drinks. Timmermans also produces some beers which excel, amongst them Bourgogne des Flandres. Their Oude Gueuze Limited Edition is up there with the best gueuzes and lifts the reputation of this underrated brewer. Well worth at try.
