​Far Yeast Off Trail Saigon Fervor Sour Ale

Beer description: This blend takes “Saigon Passion,” a beer made in collaboration with “Heart of Darkness” brewery in Ho Chi Mihn, Vietnam, to a whole new level by using different yeast, primary fermentation in wood rather than stainless steel, and extended barrel aging time.⠀

While brewing “Saigon Passion,” we syphoned off some of the wort to be fermented on Brettanomyces Claussenii in old Sake barrels. By allowing primary fermentation to occur in this environment, we hoped to start a co-fermentation with our inoculating yeast (Brett. C.) and other wild yeasts and bacteria living in the barrels’ wood. After primary fermentation had calmed down, we added additional passion fruit juice from Vietnam and aged the beer for 6 months to allow Brettanomyces to slowly ferment the remaining complex sugars in the beer.⠀

This process and yeast combination culminated in a fruit-forward, refreshing passion fruit sour beer with complex aromatics and tannins derived from oak barrels and wild yeast.⠀

Gold medal winner at the 2020 International Beer Cup in the Fruited Wood and Barrel Aged Sour Beer Category.⠀
