A collaboration Beer / Wine Hybrid with our dear friends at Lightfoot Wines. In March 2020, we were lucky to get the opportunity to travel to East Gippsland to pick Pinot Noir with Tom Lightfoot, an old friend of Ned’s. A blend of 400 kg of Pinot Noir grapes were co-fermented in stainless steel with a strong highly dextrinous wort designed for aging. After primary fermentation subsided, we removed the beer from the grapes using a basket press, then moving the beer into oak barrels for a further 12 months of maturation.The result is a true blend of techniques and skills from both winemaker and brewer, with almost 50% of the fermentables grown on the vine.
