This beer was an experiment on fermenting in barrel on hops (Ella) with Saison and Brett. After 8 months in the barrel we further aged the beer in the bottle for 6 months and the outcome is something reminiscent of a tart sasison. There are notes of tropical fruit in the background and a savoury spicy earthiness upfront. The hops and oak leave a tiny tannic grip on the finish which along with the tartness make this beer extremely moreish. A complex yet drinkable beer that crosses borders and could be enjoyed by beer and wine drinkers alike.
