Besk Bitter was made in collaboration with the unparalled team from Besk bar and bottle shop in West Leederville WA. An ale made with regenerative organic grains, NSW grown Fuggle whole cone hops, gentian root, wormwood and native Western Australian Sandalwood tree bark. Brewed on our old-world brewery in Marrickville in March 2023, this ale underwent a warm primary fermentation with our house culture collected from NSW flowers before being transferred into ex-wine oak 500 litre puncheons for two months maturation before selective blending for bottling in late May 2023.

The etymology of their name 'besk', derives from a Danish flavour descriptor meaning a taste somewhere on the sharp, bitter, tart spectrum... the ideas for this beer flowed easily from there. We blended botanicals and native tree-bark in the boil with a traditional UK-hop to lend the beer a character befitting of not only the danish word but also the classic English beer style with which the name treads so closely to.  

Tasting notes by Meesh: There is an earthy, woody richness on the nose, balanced with some sweet malt and lemon zest. Initially the palate is soft and full of citrus but it then smacks with a pleasant grippy, lingering botanical bitterness. Bone dry, textural and well suited to a hot dry day over in West Leederville.
